Chef Shagufa from Saudi Arabia has shared her Coronation recipe for Rubri Delight.
RUBRI DELIGHT
Ingredients:
- 1/4 cup rice
- 7 – 8 cardamom pods
- 1 litre milk
- 1 tin condensed milk
- 1 tin evaporated milk
- 1/4 cup desiccated coconut
- 1 cup chopped nuts
- 1/4 khoya (crumbled dried milk)
Method:
- Soak the rice with green cardamoms and crush them together.
- In a pot, add the milk, evaporated milk and crushed rice and cardamom. Let it cook on a slow heat.
- Once the rice is cooked through, add the condensed milk, chopped nuts and coconut and let it cook until it gets a little thick.
- In the end, add crumbled dried milk. Turn the gas off.
- Garnish with cardamom powder, nuts, silver foil n rose petals
